The tradition of winemaking at Château de Cabidos was successfully revived in the early 1990s after being abandoned for over a century. Today, the estate dedicates twenty acres to a variety of grapevines.
The majority of the vineyard is planted with the high-quality Pyrenean white grape, Petit Manseng, known for producing both sweet and dry wines that are highly regarded by connoisseurs. The vineyard also produces a blend of Sauvignon and Chardonnay, along with an excellent red wine made from the Syrah grape.
Located in an idyllic part of the Pyrénées-Atlantiques, Domaine de Cabidos boasts the best vines on south-facing slopes. The wines are officially labeled as Vin de Pays du Comté Tolosan, now known as Indication Géographique Protégée Comté Tolosan.
Cabidos is dedicated to careful, sustainable viticulture and is embarking on a new chapter with its conversion to organic farming.
Saint Clement Petit Manseng exudes aromas of tropical fruits, such as pineapple, candied fruit, and honey on the nose. On the palate, flavours of pineapple and mango dominate, while the wine gradually unveils hints of white truffles with time.
Food pairing suggestion: as French prescribed – as an aperitif or paired with foie gras.
