Here are the pairings you can expect:
Langres & Crémant de Bourgogne – Langres is a washed-rind cow’s milk cheese with a pungent aroma and creamy texture. Crémant de Bourgogne’s bright acidity and bubbles lift the funk and enrich the custardy core, especially if you pour a splash into the cheese’s natural dip (a Langres tradition!).
Garrotxa & Albariño – The earthy, semi-aged goat cheese from Catalonia plays beautifully with Albariño’s saline, citrusy brightness. The wine’s coastal freshness echoes the rustic minerality of the cheese.
Taleggio & Gewürztraminer – Taleggio’s savoury, meaty aroma and oozy texture need a wine with backbone and perfume. Gewürztraminer’s lychee, rose, and spice provide a dramatic, exotic foil that holds its ground.
