Here are the pairings you can expect:
Saint-Nectaire & Crémant d’Alsace Rosé – This washed-rind cheese has a silky, supple texture and a gentle funk. Crémant Rosé made from Pinot Noir offers crisp red fruit and bubbles that clean the palate and brighten the cheese’s earthy flavours.
Banon & Roussanne – The herbal, creamy, and slightly funky Banon gets lifted by Roussanne’s orchard fruit, waxy texture, and subtle nuttiness — it’s a soft, mellow match with wild elegance.
Ricotta & Moscato d’Asti – This pairing is delicate and playful — the mild sweetness of Moscato highlights ricotta’s fresh, milky flavour. Add a touch of honey or lemon zest for a near-dessert experience.
Mahon (aged) & Mencía – Mahon has a salty, spicy bite when aged, which matches Mencía’s red berry, floral notes, and light tannins. It’s a high-acid, coastal-inspired combo with great energy.
Brillat-Savarin (triple cream) & White Burgundy – Rich meets rich — the lush, buttery Brillat-Savarin is balanced by a structured, mineral-driven white Burgundy, whose acidity and subtle oak complement the cheese’s decadence.
Roquefort & Banyuls – This pairing echoes the Port-blue cheese logic but swaps in Banyuls’ Mediterranean character — think dried figs, coffee, and spice — to bring out Roquefort’s tangy, creamy punch.
Alp Blossom & Grüner Veltliner – Alp Blossom is a semi-hard cheese from Austria and Germany, encrusted in dried mountain herbs and flowers. Grüner Veltliner — especially from Austria — mirrors the alpine freshness, with its green apple, white pepper, and herbal lift. The pairing is aromatic, savoury, and regionally resonant, with layered complexity and charm.
Enjoy a gourmet evening that’s all about delighting the senses and expanding your taste horizons!
