The vineyards sit on schist and limestone soils, which play a crucial role in shaping the wine’s character. Schist retains heat and encourages ripeness, while limestone contributes freshness, lift and a subtle mineral backbone. The Mediterranean climate brings long, sunny days, but altitude and cooling evening breezes help preserve acidity. Grapes are harvested by hand at optimal ripeness to balance fruit richness and freshness.
