WMD Single Malt Caribbean Rum Cask, The Distillery
West Midlands Distillery is an independent family-run craft distillery in Birmingham, producing small-batch spirits with a strong sense of place. Launched in 2017, they first made a name for themselves with gin, rum, and vodka, before laying down their first whisky casks in 2021. Their small copper pot stills and careful, hands-on production style reflect their passion for creating characterful spirits. Now among the first whisky makers in the region, they’re adding their own distinct flavour to the growing world of English whisky.
WMD Single Malt Caribbean Rum Cask, Production Method
This single malt starts with locally malted Laureate barley and undergoes a long fermentation to bring out natural fruity esters. After double distillation in copper pot stills, the spirit is first matured in bourbon barrels before finishing in Caribbean Plantation rum casks. These rum casks, sourced from tropical climates, add layers of exotic fruit, molasses sweetness, and warming spice. The result is a single malt that blends classic bourbon cask vanilla with tropical rum notes – showcasing how different cask types create new and exciting flavours.
WMD Single Malt Caribbean Rum Cask, Tasting Notes
On the nose, sweet vanilla and toasted oak meet brown sugar, ripe banana, and a touch of citrus. The palate brings together creamy caramel, tropical fruit (pineapple and mango), and soft baking spice. The finish is long and smooth, leaving hints of honey, molasses, and warming oak behind.
Did you know?
Rum casks have been used for whisky finishing for centuries, originally when distilleries reused whatever casks they could find. Today, they’re prized for adding a rich, fruity character – giving this whisky a sunny, Caribbean twist.
Suggested Pairing: this whisky pairs wonderfully with grilled pineapple, banana bread, or spiced nuts. For a simple serve, try it in a Rum Cask Highball with ginger ale and a twist of lime to highlight its tropical sweetness.
