William Fèvre is one of the most respected names in Chablis, with a reputation built on precision, terroir expression and uncompromising quality. Founded in 1957, the domaine quickly grew into one of the region’s largest owners of Premier and Grand Cru vineyards: land that remains the backbone of Fèvre’s style today.

Since 1998, under the stewardship of the Henriot family (also owners of Bouchard Père et Fils), the domaine has embraced organic farming, dramatically reduced yields and refined its winemaking approach to highlight purity and place. Fèvre’s philosophy centres on letting Chablis speak for itself: minimal intervention, no new oak on Chablis AOC wines, and an absolute respect for the character of Chardonnay grown on limestone and ancient seashells.

Fèvre represents the gold standard for “classic Chablis”, lean, tense, chiselled and elegant.

William Fèvre Chablis, Terroir & Winemaking

The fruit for this cuvée comes from a selection of vineyards across the Chablis appellation, many planted on the region’s famous Kimmeridgian limestone, a soil rich in fossilised oyster shells. This unique geology is what gives Chablis its unmistakable salty, flinty edge.

The cool continental climate preserves acidity and freshness, while long ripening periods allow flavour intensity to build without heaviness. Grapes are harvested by hand where possible, gently pressed, and fermented in stainless steel to maintain brightness and purity.

A period of ageing on fine lees adds subtle creaminess and texture without dulling the wine’s crisp, mineral backbone. No new oak is used, which is a key stylistic choice that keeps the wine focused, linear and energetic.

Pale lemon with silver glints. Aromas of green apple, lemon zest, white flowers and crushed oyster shell rise from the glass, backed by hints of chalk, wet stone and subtle almond. The palate is refined and precise, offering flavours of citrus, pear, saline minerality and delicate herbal notes. Vibrant acidity and a clean, lingering finish give the wine exceptional drinkability and elegance.

Food pairing suggestion: Lemon & Herb Roast Sea Bream. The wine’s mineral brightness and citrus notes elevate delicate white fish while cutting through olive oil and herbs with ease.
