Astro Bunny is produced using fruit sourced from organically farmed vineyards across South Australia. The blend changes slightly from vintage to vintage but typically combines aromatic and Mediterranean grape varieties selected for freshness, texture and balance. Fermentation begins naturally before the wine is bottled while still fermenting, allowing carbon dioxide to become trapped inside the bottle and create the wine’s natural sparkle. The wine is neither fined nor filtered, helping preserve flavour, texture and its characteristic cloudy appearance.
