The fruit is sourced from carefully selected vineyards across Victoria, particularly the Yarra Valley and Strathbogie Ranges, two regions renowned for producing high-quality Australian Pinot Noir. The cooler growing conditions allow the grapes to ripen slowly, developing flavour intensity while retaining freshness and natural acidity. Fermentation takes place in open fermenters, with a portion of whole bunches included to enhance complexity and structure. Maceration periods vary between seven and twenty-one days depending on the parcel, before the wine is matured in French oak barrels, around twenty per cent of which are new. This careful approach creates a wine that balances vibrant fruit with subtle savoury complexity and fine texture.
