Pio Cesare is a name etched into the history of Barolo. Founded in 1881, the estate has remained family-run for five generations, producing traditional, age-worthy wines that reflect the essence of Piemonte’s terroir. With vineyards in top Barolo crus — including Ornato in Serralunga d’Alba, Mosconi in Monforte d’Alba, and Gustava in Grinzane Cavour — their classic Barolo DOCG blends fruit from across these sites to create a wine that balances structure, elegance, and longevity. It’s a reference-point Barolo: timeless, precise, and crafted for patient enjoyment.
The fruit comes from a combination of hillside vineyards across Barolo’s diverse communes. Each site adds its own character: Serralunga brings power and minerality, Monforte adds depth and dark fruit, while Grinzane Cavourcontributes floral finesse.
Fermentation takes place in stainless steel, with an extended maceration of 25–30 days to extract fine-grained tannins and aromatic complexity. The wine is then matured for 30 months in a mix of large Slavonian oak casks (for traditional structure) and smaller French oak barriques (to polish the texture, but without overt oak flavour). Bottled unfined and unfiltered.
Garnet-red with brick reflections. The nose is deeply perfumed, offering rose petal, dried cherry, tar, liquorice, and sweet spice, layered with cedar, tobacco, and earthy undertones. On the palate, it’s full-bodied and firmly structured, yet poised, with a core of ripe red fruits, balsamic notes, and savoury herbs. Tannins are authoritative but finely integrated, balanced by fresh acidity and a long, complex finish. A Barolo of depth, precision, and impressive ageing potential.
Food pairing suggestion: Braised Ox Cheek with Gremolata.
