Peller Estates Ice Cuvée Rose, Terroir & Winemaking
The rosé base wine is crafted from Pinot Noir, Cabernet Franc and Chardonnay, grown in vineyards moderated by Lake Ontario’s cooling influence. These glacial and limestone-rich soils give the grapes freshness, minerality and aromatic lift.
Traditional-method sparkling winemaking begins with stainless-steel fermentation, followed by secondary fermentation in bottle and extended lees ageing. This develops the silky mousse, subtle pastry notes and creamy texture.
Upon disgorgement, the wine receives its signature addition: a precisely measured dose of Vidal Icewine, made from grapes harvested at –8°C or colder while frozen on the vine. This tiny addition infuses the wine with delicate sweetness, wild berry intensity and a lush, honeyed depth without losing the crisp, refreshing spine of fine sparkling wine.

A shimmering salmon-pink hue with fine, lively bubbles. On the nose, expect wild strawberry, raspberry, cranberry and pomegranate, with hints of rose petal, candied citrus and gentle brioche. The palate is vibrant yet silky, balancing red-berry brightness with soft honeyed accents from the Icewine. Flavours of ripe strawberry, cherry sorbet, apricot and pink grapefruit zest unfold over a creamy mousse. The finish is long, elegant and lightly sweet, lifted by refreshing acidity.
