Ailalá is a viticultural initiative founded on the idea of being new, young, and fresh. It was created by winemaker Inma Pazos and sommelier Miguel Montoto, who produce wines with a distinct personality based on the concept of terroir. The wines, made from indigenous varietals, highlight the character of Spain’s North West, where the powerful, cooling Atlantic impact is paired with sustainable farming techniques that represent the deepest respect for the land. As a result, this ancient wine producing region has produced a pair of indigenous, lively, and vibrant varietal wines with remarkable personality.
This red is an aromatic and complex expression of the Sousón varietal, with cherry, cinnamon, lilac, violet, and wild red berries leading to a rounded palate with a savoury finish.
Food pairing suggestion: embutidos – Spanish cured meats.
Did you know? Ailalá is a Galician word with Celtic origins that is employed in traditional folklore. Although there is no precise translation, it is a joyful and entertaining cry: ‘Ailalá!, Ailalelo!’, a Galician Olé!
