Bramìto comes from Castello della Sala, one of the Antinori family’s most important estates, and unquestionably one of Italy’s finest sources of Chardonnay. The Antinori family has been making wine for over 600 years, yet Castello della Sala represents one of their most visionary projects: the dream of producing world-class, cool-climate whites in Umbria.

The medieval castle, purchased in 1940, sits among rolling hills where altitude, limestone soils and cool nights create ideal conditions for Chardonnay. The estate is also home to Cervaro della Sala, one of Italy’s most iconic white wines. Bramìto is its younger sibling, crafted with the same precision and philosophy but designed to be more immediately enjoyable.

Antinori’s team combines tradition with innovation, favouring sustainable viticulture, meticulous fruit selection and a gentle touch in the cellar. Bramìto showcases their ability to create a Chardonnay that speaks clearly of Umbrian terroir while retaining an international elegance that Antinori has perfected over centuries.

Castello della Sala Antinori Bramito Chardonnay, Grape Composition & Winemaking

The vineyards lie at around 400–450 metres above sea level in Orvieto, where clay and limestone soils give Bramìto its signature mineral backbone. Cool breezes from the Apennines moderate ripening, helping Chardonnay retain purity and acidity even in warm Italian summers.

Winemaking is carefully calibrated:

  • A portion of the wine ferments in French oak barrels, adding creaminess and subtle spice.

  • The remainder ferments in stainless steel, preserving citrus, orchard fruit and vibrancy.

  • Lees ageing adds texture and a gentle, Burgundian richness.

  • Malolactic fermentation is only partly encouraged, ensuring balance between freshness and roundness.

The result is a wine that is layered but bright, creamy but energetic, unmistakably Antinori in its polish and poise.

Castello della Sala Antinori Bramito Chardonnay, Tasting Notes

Pale gold with green reflections. Aromas of ripe pear, lemon curd, white peach and chamomile are joined by hints of vanilla, toasted almond and wet stone. The palate is silky and rounded, offering flavours of golden apple, citrus zest, hazelnut and soft spice, with a refreshing mineral line running through the core. Medium-bodied, elegant and beautifully balanced, with a long, savoury, lightly buttery finish.

Food pairing suggestion: Truffle & Parmesan Roast Chicken. The creamy texture and gentle oak of Bramìto match beautifully with roast chicken, while its freshness cuts through the richness of truffle and Parmesan.
