Lyme Bay Winery, based in Devon, is one of the most dynamic and quality-focused producers in the English wine scene. Founded in 1993, the winery began with a wide craft-drinks portfolio but shifted decisively toward premium English still and sparkling wines as the quality of UK vineyards surged. They now work with a network of carefully selected growers across the South and East of England, ensuring access to outstanding fruit from different microclimates.

The winemaking ethos is rooted in precision, site expression and gentle handling. Lyme Bay is one of the few English still-wine producers to vinify multiple varieties with equal confidence (Bacchus, Pinot Blanc, Chardonnay, Seyval Blanc and more) always aiming for purity, balance and complexity. Shoreline is their flagship blend: a wine created to express the diversity of English terroir in one harmonious, coastal-inspired style.

Lyme Bay Shoreline, Terroir & Winemaking

Fruit for Shoreline is sourced from vineyards across Devon, Dorset and Essex, chosen for their long growing seasons, maritime influence and excellent ripening potential in cooler climates. Chalk, flint and clay soils contribute both minerality and tension, while the proximity to the English Channel delivers cooling breezes that preserve acidity and detail.

The blend varies slightly each year but typically includes Bacchus, Reichensteiner, Chardonnay, Seyval Blanc and Pinot Blanc. Each parcel is fermented separately at low temperatures to capture aromatic clarity, then matured on fine lees to add texture, salinity and roundness. No heavy oak is used, this wine is all about freshness and finesse.

The final cuvée is blended with the intention of evoking the English coastline: bright citrus, gentle florals, a whisper of sea spray and a clean, chalky finish.

Pale lemon with silver reflections. Aromas of elderflower, white grapefruit, green apple and lime zest unfold alongside hints of sea herbs, chalk and white peach. The palate is crisp and focused yet subtly textural, offering flavours of citrus peel, pear, mineral salts and a touch of passionfruit. Bright acidity lifts the finish, leaving a lingering impression of wet stone and coastal freshness.

The “Shoreline” name is inspired not just by geography but by flavour: the winemaking team blended the wine specifically to evoke the sensation of standing by the sea.
