The grapes for the Classic Cuvée come from several vineyard parcels across Sussex, planted on chalk, clay, and greensand soils – conditions ideal for growing grapes with natural acidity and finesse. The cool English climate ensures slow ripening, contributing to the wine’s vibrant structure and aromatic clarity.
After gentle whole-bunch pressing and fermentation, the wine is aged for a minimum of 36 months on the lees, developing texture and complex autolytic notes. A small portion of the blend is aged in oak to add subtle richness and dimension. The wine is then disgorged and finished with a carefully measured dosage to balance its crisp acidity.
