On Santorini, which takes pride in having some of the world’s oldest vineyards, wine has always been a part of daily life. The beauty of this island, whose wines are a treat to savour and, like the island’s sunsets, elicit praise and admiration, is beyond description.
Paris Sigalas is a revolutionary in the story of Assyrtiko: he is the inventive winemaker who brought Santorini’s wines to a global level by integrating mathematics and other cutting-edge concepts with oenology and agriculture. His debut vintage was the 1991 Santorini, which also served as Domaine Sigalas’ first wine to bear the Protected Designation of Origin title.
The idea is that inventiveness and technical know-how can live in harmony with the island’s long-standing winemaking traditions. According to Paris Sigalas, it was his passion for tasting wines that ultimately raised the bar for his own product.
Santorini Assyrtiko is a dry, full-bodied white. It’s fermented in French oak barrels, part of which are new, giving the wine its golden hues and adding complexity. The aromas range from citrus and mineral to nuts and vanilla. On the palate, it is refreshing and enticing, with notes of honey and flavours such as peach and ripe citrus.
