Larry Cherubino Uovo Nebbiolo Cabernet, Producer
Uovo is an experimental label from acclaimed Western Australian winemaker Larry Cherubino, known for his innovative, site-expressive wines. The name “Uovo” — Italian for egg — refers to the use of concrete egg-shaped fermenters that enhance texture and purity. This blend of Nebbiolo and Cabernet Sauvignon is a daring fusion of Old World tradition and New World precision, sourced from select vineyards across Western Australia.
Larry Cherubino Uovo Nebbiolo Cabernet, Terroir & Winemaking
Nebbiolo and Cabernet are harvested separately from elevated, well-drained sites with gravelly loam and calcareous soils. Fermentation takes place with native yeasts in concrete egg tanks, which encourage natural convection and gentle micro-oxygenation, allowing the fruit to shine with clarity and detail. Minimal sulphur, no filtration, and brief ageing in neutral oak round out this small-batch wine with finesse and structure.
Larry Cherubino Uovo Nebbiolo Cabernet, Tasting Notes
Vivid aromas of blackcurrant, dried cherry, and tobacco leaf open into flavours of plum, cassis, and earthy spice. The wine shows Nebbiolo’s fine-grained tannins and Cabernet’s depth and drive, all wrapped in a supple, energetic texture. Notes of black tea, graphite, and violet linger on a long, savoury finish.
