The Gaisberg vineyard lies on weathered primary rock with mica-schist, giving the wine a deep mineral backbone. The vines benefit from sunny days and cool nights, preserving natural acidity and aromatic complexity. Grapes are hand-harvested and gently pressed. Fermentation occurs in stainless steel at controlled temperatures, followed by extended lees ageing to enhance mouthfeel and complexity. No oak is used, keeping the wine linear and expressive of its site.
