Babylonstoren Candide: A Complex South African White Blend
Candide is Babylonstoren’s beautiful white blend: complex and refined, with citrus, stone fruit and subtle herbal notes. Textural and well balanced, it is a wine that rewards a second glass.
Babylonstoren is a farm in the Franschhoek area of South Africa, with vineyards on the slopes of the Simonsberg mountain between Franschhoek, Stellenbosch and Paarl. Candide brings together all the white grapes grown on the farm.
The blend includes Chardonnay, Chenin Blanc, Sémillon and Viognier, with a little Roussanne. Each is treated differently: the Chardonnay is fermented in older French oak, the Chenin and Sémillon in stainless steel, and the Viognier and Roussanne are aged in cement eggs and terracotta amphorae. Bringing them together gives a wine with real layers.
Expect tropical fruit, lemon, lime and honeysuckle on the nose. The palate is fresh and medium-bodied, with a silky, beeswax-like texture and a dry, refreshing finish.
Babylonstoren Candide Food Pairing Suggestion:
Lovely with spring vegetable dishes, chicken or ham salads with stone fruit, roast chicken or grilled fish. Serve chilled, at around 11–12°C.
