With more than 1,000 hectares of organically grown vines, Colomba Bianca Cantine is the largest Sicilian grower cooperative and the largest Italian producer of organic wine. Additional vineyards at Colomba Bianca cover 7,500 hectares and grow both local and international varietals. Despite their small size, they combine a micro-viticulture and micro-winemaking methodology to guarantee the highest level of accuracy, quality, and terroir expression. Under the close supervision of head winemaker Mattia Filippi, a beautiful selection of single varieties and cutting-edge blends are created here.
Grillo is a gem of a variety from Sicily, it is a great alternative for Sauvignon Blanc drinkers. This aromatic wine has a lifted bouquet of citrus and tropical fruits that have matured in the sun. On the palate, it is dry and crisp with ripe roundness and a cool aftertaste. Kore is Colomba Bianca’s more premium range, and has a wonderful texture on the palate, as well as finishing with fresh crisp acidity.
Food pairing suggestion: Octopus salad.
