Hundred Hills is based in Southern England, surrounded by wild forest. The vineyards are carefully divided into 10 parcels each with its unique aspect and soils.
The winemakers pride themselves in thoroughly recognising and embracing environmentally-friendly methods and approaches that are proven to be effective across various countries, without being restricted by outdated customs and regulations. By employing a minimalist winemaking style, Hundred Hills focuses on allowing the grapes and terroir to express themselves naturally without excessive intervention or manipulation. This approach is reminiscent of the principles found in Burgundy, where wines are often sought after for their ability to reflect the nuances of the vineyard and the vintage.
Hundred Hills Blanc de Blancs is made from 100% Chardonnay grapes, planted on steep chalky slopes: poor enough to make the vines struggle and produce remarkable fruit.
This sparkling is full of rich lemon, limes and yuzu aromas, that continue on to white flowers, white peaches, finishing with exotic fruit notes. It is complex and harmonious, but give it some time in the bottle and it will keep evolving.
Food pairing suggestion: Winemakers recommend it with seared tuna, sesame seeds and crispy seaweed.
