Vineyards in the Languedoc are frequently referred to as “patchwork” since so many distinct grape varietals coexist there. But alongside rich Cabernets and Malbecs, Les Mougettos managed to produce a beautifully fresh Pinot Noir.
A fine Pinot Noir requires grapes that are at their optimal ripeness. The variety’s delicate character should be preserved by keeping the sugar content relatively low, even when the full aromatic potential has already been achieved. To make this happen, a portion of the crop is picked very early and fermented at low temperatures, releasing fruity aromas. The other, fully ripe part undergoes a traditional, extended maceration. A third of the wine is aged in French oak barrels for several months, which gives the wine depth.
