Colomba Bianca is the largest Biodynamic producer in Sicily, with all their wines certified as Organic and Biodynamic.
Nero d’Avola is well known for being a palatable wine with sweet tannins that is popular in pizzerias all over the world. It is the most significant red grape in Sicily. Through the application of cutting-edge technology and the meticulous mapping of the terroir in accordance with weather patterns, harvesting time, soils, and vine age, the highest standards are achieved here in these sun-drenched vineyards. According to the terroir and environment of the vineyard, the grapes are analysed to determine their optimal ripeness levels before being manually harvested. To avoid the grapes being prematurely crushed, they are then harvested into 20 kilogram containers. The vines’ unique soil and temperature characteristics, which span from sea level to 700 metres above sea level, give the wine a subtle depth.
Winemakers Mattia Filippi and Francesco Asaro at Colomba Bianca created this fruity, silky style. They produce a consistently superb red using fruit from a number of organic Sicilian vineyards. On the palate you’ll taste juicy plums and black cherries with violet undertones and a spicy finish. This Nero d’Avola is fresh and fruity, with lovely crunchy fruit.
