In 1893, third-generation Fred Caley Smith embarked on a grand scientific voyage, returning with innovative horticultural advancements that laid the groundwork for Yalumba’s sustainable viticulture and winemaking practices today.
Eden Valley in Australia is celebrated for its rich heritage in cool-climate winemaking. The region’s high- altitude vineyards, combined with a strong commitment to sustainable practices, enhance its appeal to wine enthusiasts looking for a distinctive tasting experience.
Grapes for this Roussanne are sourced from three Eden Valley vineyards. These blocks have different ripening periods, leading to a diverse array of aromas and flavours.
After harvest, approximately 60% of the fruit was gently pressed directly into barrels, with the remainder going into stainless steel tanks. During blending, the barrels of wine that did not make it into the Virgilius blend are also included in the final assemblage. The wine was fermented and matured for 10 months in older French oak barriques.
The wine offers vibrant aromas of mandarin, apple pie, wild fennel, and sea spray. The palate is refreshing and silky, with a well-balanced profile. Flavours of white-fleshed peaches, grapefruit, and pineapple are complemented by fine acidity, an almond meal texture, and lingering notes of preserved lemon.
