In 1989, Álvaro Palacios, along with Josep Lluís Pérez, Carles Pastrana, and René Barbier, ventured into the impoverished and overlooked Priorat region. During that era, only four wineries produced bulk wines known for their high alcohol content, rustic nature, and lack of elegance, priced at no more than 100 pesetas per liter (less than 1 euro). Despite these challenges, Palacios and his colleagues were captivated by the region, particularly its challenging licorella soil, which yielded low quantities. With determination and patience, a decade later, they accomplished what had seemed unimaginable to many.
Finca Dofí, often regarded as the younger brother to the renowned L’Ermita, originates from a single 10-hectare vineyard in the village of Gratallops (Tarragona) at 300 meters above sea level. This vineyard primarily features Garnacha vines, planted in the distinctive llicorella soil of the D.O.Q. Priorat, and is cultivated through environmentally conscious agriculture practices.
Following careful hand-harvesting and meticulous selection, the grapes undergo destemming and crushing at the winery, initiating fermentation with indigenous yeasts in oak barrels. The wine then matures for a period of 19 months in large oak barrels, contributing to its complexity. The resulting Finca Dofí captures the essence of its terroir.
The Finca Dofí is a spicy, generous, and gratifying wine, making it an ideal companion for food. It presents cherry fruit notes, accompanied by silky tannins, and concludes with an impressive purity in the finish. Overall, it is simply delicious and offers a delightful experience for the palate.
Food pairing suggestion: Spiced roast goose.
