Katie made a risky purchase of a vineyard in Languedoc back in 2008, after spending many years living and working there. However, working in the wine industry is one thing; producing wine is quite another. She admits there have been moments of doubt, but not often or for very long, as things have gone remarkably smoothly. Her wines have received praise from experts, won awards, and led to the acquisition of additional wineries.
Only ever so slightly orange, this very special wine was not produced to follow a trend but as a special request from Katie’s ramblers.
The grapes are hand-picked from one of Katie’s tiny vineyards known locally as Le Colombier. The vines, 60 years old, are likely among the last of this grape variety in the village of Tuchan. While Macabeu was widely planted in the neighboring village of Paziols to make a sweet wine, the Tuchanais preferred to plant Grenache for their Vin Doux Naturel.
The winemakers feel extremely fortunate to have this vineyard, which they farm organically. They ask the vines to produce only a small amount of grapes each year, resulting in concentrated and powerful flavours with a surprising acidity for Macabeu. We keep the yields low by thinning the shoots in the spring, and the poor, dry-farmed, limestone clay soils further limit production of this otherwise vigorous grape variety.
This wine offers a creamy custard, apple, pear crumble, and hawthorn blossom fruit character, complemented by a rich, waxy note. It is a delightful wine with a soft texture and a phenolic firm richness.
Food pairing suggestion: Oven baked camembert and baguette.
