Rolly Gassmann Sylvaner Réserve Millésime is a wonderfully distinctive take on a grape that is too often underestimated. Rather than the light, neutral Sylvaner sometimes associated with Alsace, this is rich, textured and remarkably expressive, with ripe green melon, pear and fresh grape layered with white flowers, almond and gentle spice. A touch of residual sweetness gives the palate a soft, almost velvety feel, but this is beautifully countered by taut acidity and a distinctly saline mineral character. The result feels generous without becoming heavy, finishing long with orchard fruit, nuts and a savoury freshness. It is unmistakably Rolly Gassmann in style: ripe, characterful and released only when the domaine believes the wine has reached the right stage of development. It also has the structure to evolve beautifully in bottle for many years.

Domaine Rolly Gassmann is based in the small Alsace village of Rorschwihr, north of Colmar. The Rolly and Gassmann families can trace their winemaking history in the region back to the 17th century, although the present domaine was created in 1967 when the two families were united through marriage. Today it is run by second-generation winemaker Pierre Gassmann.
The estate has around 50 hectares of vineyards spread principally between Rorschwihr and neighbouring Bergheim. What makes Rolly Gassmann particularly unusual is its approach to maturation. Rather than releasing every wine as quickly as possible, the family maintains an enormous cellar of older bottles, storing more than two million wines and allowing individual cuvées to develop until Pierre feels they are ready to drink.
That philosophy is particularly suited to Rorschwihr. Its complex limestone soils often produce wines that can appear reserved when young but develop extraordinary depth with time. In 2019, the domaine completed a six-level gravity-fed winery built into the hillside, affectionately nicknamed “the cathedral” by locals.

The Sylvaner comes from a 5.5-hectare vineyard in Rorschwihr planted on a complex mixture of clay, marl and limestone. The geology here is exceptionally varied because the village sits on a geological fault line, resulting in numerous different limestone formations and an equally complicated subsoil.
The vineyards are farmed using organic and biodynamic principles, although the domaine does not currently hold formal certification. Vineyard work takes into account lunar and stellar cycles, while harvest decisions are based not simply on sugar levels but on the physiological ripeness of the skins and pips. Grapes are picked by hand, and Rolly Gassmann is known for harvesting comparatively late to achieve full flavour and concentration.
Once at the cellar, the fruit receives a very long and gentle pressing lasting several hours. Fermentation takes place in temperature-controlled stainless steel using indigenous yeasts and can continue slowly for several months. The wine is then matured for an extended period on its fine lees before bottling. No oak flavour is introduced, allowing Sylvaner’s fruit, texture and mineral character to remain clearly defined.

Vibrant pale yellow in the glass, with an inviting nose of white flowers, ripe pear, fresh grape and green melon. Raw almond and delicate nutty notes add another layer, while subtle spice becomes increasingly apparent as the wine opens.
The palate is generous and softly textured, with ripe grapey fruit and orchard flavours given additional richness by a gentle touch of residual sweetness. Rather than feeling overtly sweet, however, the wine is held together by taut acidity and an attractive saline quality.
Pear, melon and grape linger alongside almond, white pepper and subtle mineral notes. The finish is long, rounded and savoury, with an appealing tension between richness and freshness that gives the wine excellent ageing potential.
