Spirit of Birmingham is in the process of creating something truly unique that blends magic, art, and science. After several months of intensive research and development, they have perfected their recipes and techniques, acquiring a wealth of new knowledge along the way.
Interestingly, SoB were not releasing Rums, but the public have spoken! The special guest was invited, and, although they can’t disclose the distillery, rumour has it that it’s quite renowned.
When making this product, they new that it’d have to be single, interesting, with great taste and integrity. Single barrel, no blending, no added colour or sugar – the spirit & expertise of the distiller, is exposed. So it comes from a meticulously chosen Jamaican barrel, distilled from molasses in February 2015, shipped to the UK, and aged for seven and a half years in an ex-bourbon cask.
On the nose, it has notes of butterscotch, sweet bananas, and cherry bakewell. On the palate, flavours of pear drops, custard pastries, ginger, and a subtle oak spice. The spice lingers on the finish with refreshing hints of menthol
