The GCM is the stand-out wine, a blend of Grenache, Carignan, and Mourvedre grapes. This wine is a mid-ground between textbook-safe wine and absolutely natural. The juice has 10 days of skin contact maceration, and then is kept in French oak, 25% of which are new, for 18 month for maturation. The result is a well-rounded, fruity wine with flavours of forest fruits, cherry, raspberry and mulberry, vanilla, mint and tobacco notes, and subtle hints of spice.
