The “Ulm” is a Monopollage on the Nußberg, right next to the Danube, extremely steep and extremely chalky. Nine different varieties grow here in a colourful mix in the vineyard and wonderfully express the terroir of this location. This Gemischter Satz DAC is composed of 9 grape varieties – Pinot Blanc, Neuburger, Welschriesling, Grüner Veltliner, Sylvaner, Zierfandler, Rotgipfler, Traminer, and Riesling – all handpicked and carefully selected, with botrytis-affected grapes removed before processing. After approximately 3 hours of maceration, the grapes were gently pressed using a pneumatic press, and fermentation took place in cooled stainless steel tanks (75%) and large, used oak barrels (25%). The wine is bottled following nearly a year of ageing on the lees.
This white displays a bright lemon-yellow colour, a wonderful aromatic profile, and an elegant bouquet of ripe white and yellow fruits with fossil-rich limestone aromas. On the palate, it is full-bodied, offering a very fine and elegant blend with concentrated, perfectly balanced fruit and a touch of saltiness. A wine with character!
Food pairing suggestion: Chicken in white wine sauce.
