Yarra Valley has not always been known for its generous wines. It’s not until the mid 20’s century the valley has gained its reputation for winemaking.
According to legend, botany students of the wine visionary Dr Bailey Carrodus visited Yarra Valley to study its flora, terrain, and soils in the mid 20’s century. At the base of the Warramate Hills, he discovered the ideal location for vine plantings, and he started planting there in 1969.
All of his conditions were met by the gradual slope’s northerly orientation and deep grey silty loam with bands of gravel. Good drainage, continuous exposure to the sun’s warmth, and a sufficient height above the valley floor prevent spring frosts.
The Yarra Yering vineyards had arrived and would eventually rank among the greatest in the Yarra Valley.
The Yarra Yering Underhill is a 100% Shiraz wine made only from a block of unirrigated Shiraz grapes grown on 8 acres at the westernmost point of Yarra Yering and planted in 1973. This red wine has intense aromas of black plum and violets, and expresses flavours of spice and dark fruits with chewy tannins. Some stems vere added to the tanks during fermentation process to achieve good structure, and maturation in oak softened the tannins and added favourable complexity.
Food pairing suggestion: Venison steaks with stroganoff sauce and shoestring fries.
