Ukraine is not the first country that comes to mind when you think of wine, but when Phil discovered this gem it left no shadow of a doubt that dedication and care can help create an outstanding wine on the most surprising territories.

Sergiy Stakhovsky, a world-renowned tennis player and exceptional athlete, didn’t believe that alcohol had a place in his life. That is until he was given the chance to play for the Bordeaux team, Villa Primrose, in the French Team Championship. During his stay in Bordeaux, he began a life-changing journey to learn about wine from the terroir and the producers themselves as well as to develop a love for wine as a consumer, something he had not done before.

Sergiy was offered the chance to take over a vineyard in the far western region of Ukraine in 2015. Although having a “very great wine cellar” had always been his dream, this new business gave him the chance to promote wine made in his own country.

His wines are of exceptional quality, made with care and dedication.

The vineyards are located in the Zakarpattia and are grown on hills with an elevation range of 50 to 200 metres; these hills are the foothills of the Carpathian Mountains, which shield the vineyard from cold fronts coming from the east.

The Pannonian Plane, a vast plateau on which Hungary, Serbia, and some of Slovakia are situated, is seen from the vineyard’s opposite side. You can also say that the vines are rooted in gold because the only active gold mine in Ukraine is located just a few hundred metres from the estate’s boundary.

These wines are of the highest calibre but also are unquestionably crowd-pleasers. Matured in former Leoville Las Cases and Ruazan-Segla barrels, they are definitely worth the expenses invested.

Ace Saperavi is made out of 100% Saperavi grapes, originally native to Georgia, but popular all over most European countries. The wine is fresh and very well-balanced thanks to the naturally warm climate and elevation of the vineyards. The aromas are a reflection of the Carpathian area: black fruits, notes of green pepper and chocolate.

Food pairing suggestion: Kuchmachi: chicken gizzards, hearts and liver with pomegranate.
