Colomba Bianca was established in 1970 and is one of Sicily’s top cooperatives. Under the direction of Leonardo Tachetta, it had a significant makeover in the 1990s, renovating their wineries and kicking off the process of converting their vineyards to organic cultivation. All of the Lavi wines are vegan and organic.
Nerello Mascalese is Sicily’s answer to Pinot Noir, where it offers a light and soft wine with super smooth texture. The variety is indigenous to Sicily, where it grows on foothills of Mount Etna. The organic vines growing on calcareous soils at 330 metres above sea level in the valley between Vita and Salemi, 20 miles east of Marsala. This is a fragrant wine with cherry and mulberry fruit aromas.
Food pairing suggestion: Sausage, leek and fennel pasta.
